81. Fry 3 different foods in oil (9/13/2018)

This goal was originally to "deep fry something at home." But I fried something in oil and realized that "deep frying" would take way more oil than I'm willing to use, so I decided to change this one.

I think frying things in oil is such an interesting way to cook and the crispiness that comes from it is one of my favorite things. I decided to do a few different types of foods, so I could see how different things respond to frying. And I figured if I did more than one thing that I could learn some tricks along the way :)

Side note: All of the things I've done have been within my AIP diet, so I've used coconut oil or avocado oil, and cassava flour. And no eggs. A little harder to work with, but a little healthier and still pretty good :)

1. Beef Empandas 
Forgot to take a picture of the after and during frying...but here's the before! I had some issues with these. The meat was already cooked, but the cassava dough was really thin and ripped a lot. It was really frustrating, but I did have a few that turned out okay. I want to try these again, or at least another version of them.



2. Cassava-Breaded Chicken
This was so yummy! It totally filled my fried chicken cravings. Thank you cassava flour!! I want to try this one with smaller pieces of chicken, but I will definitely be eating it again.


3. Plantain Chips
I LOVE plantain chips!! I did these plain, as chips for some pork nachos, and then sweet, with cinnamon and coconut sugar for a dessert. Both ways were basically the same - fry both sides, smash them, fry a little longer. The plain ones were PERFECT for nachos, and I don't think I would be sad if I never went back to tortilla chips. I would have liked to do the sweet ones for less time so they were a little softer, but they were still good :) I will, without a doubt, be making these again.


One of the biggest lessons/tricks that I've learned through this: Let things fry for a while before you move them. Otherwise the breading will fall off, the dough will rip, or other unfortunate thing. I'm excited to learn more things as I keep frying stuff, because I really love the outcome.

One last thing, I was looking through old posts and thought this was ironic - last year at this time I was eating deep fried cheesecake, and this year I'm frying plantains in coconut oil haha :) What a change a year makes!
